  • Onion, finely chopped 1 medium
  • Tomato, finely chopped 1 small
  • Green chilli, finely chopped 1–2
  • Fresh coriander, chopped 2 tbsp
  • Ajwain ½ tsp
  • Red chilli powder ½ tsp
  • Turmeric powder ¼ tsp
  • Cumin seeds ½ tsp
  • Curd 2 tbsp
  • Salt To taste
  • Water 1–1¼ cups
  • Oil / Desi Ghee For cooking

1 Combine Double Trishul Besan, ajwain, cumin seeds, red chilli powder, turmeric and salt in a mixing bowl.

2 Add curd and gradually add water while whisking to form a smooth, lump-free batter.

3 Add chopped onion, tomato, green chilli and fresh coriander. Mix everything well.

4 Rest the batter for 10 minutes so the besan absorbs the liquid and develops a better texture.

5 Adjust the consistency with a little water if required. The batter should be smooth and pourable.

6 Heat a non-stick or cast-iron tawa and lightly grease it with oil or desi ghee.

7 Pour a ladleful of batter onto the centre and spread gently into a medium-thin round chilla.

8 Drizzle a few drops of oil around the edges and cook until the bottom turns golden and crisp.

9 Flip carefully and cook the other side for 1–2 minutes.

10 Serve hot with green chutney, curd or tomato chutney.
